It is a widespread knowledge that rice is very popular in Asia. It can be prepared in many ways and paired with wide variety of dish. Rice is a great source of energy and very affordable. However, rice is rich in ingredients that cause diabetes and obesity. According to research, a single cup of rice contains 200 hundred calories of starch which later becomes sugar and ends up as body fat.
But there is a way to take away approximately 60% of its calories. All you need to do is to follow the steps below!
1. Pour enough water for your rice to cook in the rice cooker, but don't add in the rice yet, just let the water boil.
2. Get 3% of coconut oil which is equivalent to the rice that you'll be cooking.
3. Mix the coconut oil with the boiling water.
4. Add in the cleaned rice grains in the rice cooker and mix it a bit then let it get cooked.
5. Allow the rice to cool down in the refrigerator for 12 hours.
Now you have 60% less calories in your rice! And this is the reason why:
According to research, any kind of starch can be changed depending on the cooking process. For example, when the starch in the potatoes gets fried, it becomes more unhealthy.
If the digestible starch can be reduced, so can the calories! Fried rice has more resistant starch than steamed rice. Resistant starch are slower to digest, and doesn't become glucose or glycogen since our body can't digest that kind of starch which has lower calorie content. So you can prefer fried rice over steamed rice now!
When coconut oil is mixed with rice, the oil enters in starch granules while it cooks and adds a protective layer, which ostensibly changes the structure of the rice granules so they become resistant to the digestive enzyme. Ultimately, this means that fewer calories from the rice are absorbed by the body. During the extended cooling process, as the rice starts to "gel," the amylose -- the starchy part of the rice -- leaves the granules. The 12-hour cooling period also leads to the formation of hydrogen bonds between the the amylose and molecules outside the rice grains. This converts it into the starch the body is unable to digest.
